Custard Meringue Cake

A sponge cake layered with custard and fruits topped with meringue and baked for a couple of minutes. What you get is a marshallow-ish top. Looked forward to working on this cake as it involved a new technique, a new learning. I made the oval meringue (called quenelles) for the first time. This cake has a sweeter crunchy top which complements the less sweet cake and custard. The flaked almonds on the sides add further crunch in the taste. The three different varieties of blue flowers are edible made of sugar.

Mango Cake

Especially for Indian summer! It is hot in India. Temperatures are rising but mango lovers are not complaining because summer is the season of mangoes.  It is the time of the year to have mangoes in every possible form. Here’s a mango cake layered with mango yoghurt and mango cream topped with mango pieces.

Honey bees, flowers and honey liqueur. Cycle of nature!
These honey bees are edible (made of marzipan) so are the sugar flowers. Had got the honey liqueur from Slovenia. Bees and honey are important part of this country.
