Red Velvet Cake with Cream Cheese Frosting

A light and delicate cake works well with sweet and salty Cream Cheese layer and frosting.
Here’s the history of the Red Velvet Cake, courtesy Google.
Apparently a chef at the famous Waldorf Astoria Hotel in New York City created the Red Velvet Cake and it was a popular dessert at the hotel's restaurant. A patron of the hotel wrote to the chef requesting the recipe. He did send her the recipe along with a bill for $350 which upset her. She bought the same and ensured revenge by mailing the recipe out to hundreds of others in the form of a chain mail! So the recipe is no longer a guarded secret.
